Chestnut flour

5,00 - 11,00

Harvested and peeled entirely by hand, this product is the result of a family project to reforest indigenous chestnut trees and increase the population of Apis Mellifera (bees) on the slopes of the Sierra de San Mamés Natural Park in Portugal. Rich in fibre, vitamins and carbohydrates, the chestnut was once an everyday food. With the introduction of the potato and the industrialisation of cereals, the chestnut was almost forgotten. Art Marvão is committed to recovering this fruit and offering it in the form of flour.

🌰Our flour is made from the fruit of the species Castanea Sativa, variety Clarinha de Marvão.
🌰In the 15th century, the Bishop of Portalegre D. Frei Amador Arrais, poetically described how "Nature seems to tremble in the freshness of the [chestnut] trees." He also wrote that "The Soutos Alentejanos (tree groves in Portugal's Alentejo region) represent a considerable source of subsistence for the population of this area, which is poor in economic resources. The production of chestnuts serves not only as a source of food for people, both in its green and dry form, but also for feeding farm animals."
🌰A highlight of traditional gastronomy in Alentejo, chestnut is a highly popular ingredient that can be found in dishes such as chestnut soup, pork with chestnut, turkey with chestnut and as flour.
🌰The flour can be used to make desserts, cakes and soups, enhance the flavour of creams, sprinkle meat dishes, add to breadcrumbs to pan any food and also to make chestnut puree, adding two parts of water or milk.
